Niet alleen mevrouw P. de K. te Amsterdam, maar ook mejuffrouw P. te Delft verkrijgt bij het bakken van cake niet het resultaat dat gewenst is. De cake rijst in het midden zeer sterk, en barst open, zodat er in het gebak een scheur ontstaat.
De oorzaak hiervan is niet te wijten aan het systeem van de oven, maar aan de manier van bakken. Om te voorkomen dat de cake in het midden hoger wordt dan langs de kanten, moet u, als de vorm gevuld is, het beslag wat naar de kanten opduwen, zodat in het midden een geul gevormd wordt.
Het barsten wordt veroorzaakt doordat de oven vrij heet is en er zich al een korst vormt vóórdat het beslag volledig is uitgerezen. De cake rijst dan verder uit, ten gevolge waarvan de al gevormde korst wordt doorbroken en er zo een scheur in het gebak ontstaat.
Daarom moet in het begin van het bakproces de oven matig warm zijn, om het gebak de gelegenheid te geven te rijzen. Na ongeveer vijftien minuten voert men de temperatuur iets op, zodat de cake gaar kan worden. Tegelijkertijd wordt de cake bruin. Is nog niet de gewenste kleur verkregen wanneer de baktijd (plm. één uur) verstreken is en de cake gaar - we controleren door er voorzichtig met een naald in te prikken dan stelt men de oven heter en/of op bovenwarmte. De oven uitdraaien wanneer de cake goed is, haar even er in laten staan, met een open ovendeur, en haar daarna keren
